The healthiest banana bread…ever

Growing up I always ate banana bread; it is a staple in my household, I still wake up to the smell of it and it is one of the only foods that I adore that doesn’t contain chocolate! Recently I was browsing Deliciously Ella’s website and came across her version of banana bread & decided to try make it but a little differently.

Ingredients:

  • 5 large over-ripe bananas
  • 2 cups of almonds
  • 1 cup of pecans
  • 1 cup of rice flour
  • 3 table spoons of milled chia seeds
  • 4 serving spoons of honey
  • Cinnamon (optional)

Begin by pre heating the over to 150C, then in a food processor, I have used my nutri-bullet combine the almond & pecan nuts and blend them together until they become flour like. This shouldn’t take more then thirty seconds.

Once ground add them into your mixing bowl with the rice flour, chia seeds & honey and then blend together. I have used a brand of honey I found in Dubai called Balqees and it is infused with cinnamon & sesame seeds; it is sweeter than honeys such as Rowse.

Next mix in the bananas until they are completely mashed into the mixture, the texture of the batter should be sticky. Lastly, grease your pan and place in the oven to bake for about an hour.
